Vegetarian Creamy Potato and Kale Soup

Ingredients
2 TBSP olive oil
1 (med) onion, diced
4 cloves garlic, minced

4 cups potato, diced (~2 large potatoes)
4 cups (32 oz) vegetable broth
2 cups water
1/8 tsp cayenne pepper
1/4 tsp black pepper
3/4 tsp salt
2 tsp Season All

3-4 cups kale, bite size pieces
1 cup cream

Steps
1 sauté onion and garlic in oil (5 minutes)
2 add broth, water, potato, cayenne pepper, black pepper, salt, Season All
3 Bring to boil, gently boil 20 minutes
4 Add cream and Kale
5 Bring to boil, turn down heat and simmer 5 minutes

Looks really good.

I love kale in soups. It stands up and survives as a discernable ingredient, unlike most other greens, save chard and beet tops, and escarole. But better than the latter three.
