Bubbling MUTTON Stew

I have cooked Irish Stew a few times in the past...One issue I have...
Stews are best eaten the day later, right? Well I think so. The thing is
that my Irish stew seems to be fermenting/bubbling when I take it out of the fridge on day 2, it smells of...well...pungent mutton. Is this because of the meat quality/cut or barley? I'm not really sure. Any advice
