Greeting from Monterey

Hi everyone! My name is Fred and you will find my posts under the moniker of fnorrisnielson. I live in beautiful Monterey CA. I have been an avid kitchen lurker since my grandmother taught me how to bake bread and pies before I even reached my teens.

I used to be one of those guys who followed recipes to the letter especially measurements and cooking times. Now I just use recipes for ideas and mix and measure spices by feel. Thermometers have replaced cooking times. I try to add my own personality to dishes I prepare although there are a few treasured recipes where I just can't bring myself to change a thing.

Look forward to discussing one of my favorite topics with you all in the future.
