I am from london , United Kingdom . I am a sous Chef at a privte school. I have recently taken up a hobby of jam making and that is how I found this forum. I look forward to posting and seeking advice.

yes would be great to exchange ideas! I am a total newbie!!! I turned clementines into marmalade yesterday but do not think got setting point qite right not fully set. However it tastes great !! Did some plain clementine and then clementine with mandarin brandy!! Had some on a roll this morn and was delicious and so fresh! Hope I can get the setting point better next time.
