I fell in absolute love with Texas style cooking while in El Paso for three weeks. NOW I know what really good Huevos Rancheros are.
A Mexican woman I know simmers a couple/three plum tomatoes with a jalapeno pepper until the tomatoes are fork tender. Then, after draining the water out, puts it in a blender with some salt. Puts oil in a frying pan, drops a corn tortilla in, presses a dent to hold a broken egg in, bastes with the surrounding oil (using a spoon) until the egg is done to whatever hardness you want the yolk. She lets it drain on a paper towel, adds crumbled queso fresca and tops with the salsa. Hard to stop at one!
Texas is one special place!
