i usually put this on salmon but have put it on lamb chops and steak before and it was just as tasty.
-about 1/2 c. heavy cream
-crumbled bleu cheese (a handful)
-1 to 2 tbsp. green peppercorns, drained
-dash hot sauce
-dash worcestershire
-dash of onion powder
-dash of garlic powder
-finely chopped parsley
combine all ingredients and whisk over low heat till smooth. the green peppercorns are mild in flavor so you can use plenty.
