Jamaican Jerk Sauce

Does anyone have a really great jerk sauce recipe? Tried a pile of the ones available on the 'net, but none stand up.

Here's one I've used. It's not spicy hot, but that's easy to fix. Just add some cayenne, or, if you're a pepper-head, some diced fresh habaneros.

Jerk Marinade
Yields: ~1 c

t Thyme
1 t Salt
2 t sugar
1 t Ground Allspice
t Ground Cinnamon
1 t Cayenne
1 t Ground Black Pepper
3 T soy sauce
1 T salad oil
1 T Cider Vinegar
c Herbs de Provence

Mix all ingredients together. You may need more oil. Store in a non-reactive container.

IMO scallions are an essential ingredient in jerk paste or sauce. As well as lots of allspice.
