I have honey pineapple chunks soy sauce apple cider and brown sugar (and just about every spice) at my disposal. I want to make a sweet and spicy glaze sauce (not sweet and sour) but don't know where to start. I am making pork chops but not trying to make the same salt/pepper/pan/or grill chops. Any help is appreciated.

Thanks

OK.. here is what I would try.. 3 cups apple cider, 3 table spoons soy, 1 cup brown sugar, 1/2 cup cider vinegar(optional.. makes it more sweet and sour). To that add a table spoon of Cayenne pepper, tablespoon Tabasco and 1/4 cup Worcestershire sauce. Add the pineapple. Bring to a boil and taste after the flavors combine. If its too sweet, more vinegar or more cider if you aren't using vinegar.. too sour add honey... not enough bite add Worcestershire...not hot enough more cayenne or Tabasco.. not salty enough more soy...

Boil it down until it reduces by half...

I would put all the ingredients you named in your first post in the food processor with a pinch of chilli or cayene pepper and blend them. That should make a nice sweet and spicey glaze.

Mel:)
