In a large sauce pan melt 1/4 cup of butter. Use med heat.Add 1/4 cup chopped shallots cooking til golden about 3 min.Add either 3 lbs. fresh ripe tomatoes chopped or 28 oz. can of Italian tomatoes chopped cook stirring now and then til thickened about 20 min. Let slightly cool.pass tomato mixture through a food mill return to stove and heat over med heat for about 1-2 min add 1/2 cup heavy cream serve hot.
