REC - Apricot Mojo Sauce - TNT

APRICOT MOJO SAUCE

makes 1 ½ cups

4 fresh apricots*
5T orange juice
1 ½ tsp. sugar
1tsp. lemon juice
½ tsp. fresh chile
4 cilantro sprigs

Pit apricots and puree with remaining ingredients til smooth. Season with salt. Serve w/grilled chicken or fish, or pork.

* canned works fine.

Erik - This was one of our standby catering recipes - marinated grilled chicken breasts (evo, sherry vinegar, dried chiles, garlic), sliced on the bias and napped with the sauce; plattered up, it looked gorgeous - and when fresh aps were in season, used those for garnish.
