If you get back there, take a day trip out to Fredericksburg. It is about an hour from Austin. It is very German, and has lots of antique and crafts shops. There are also a number of wineries in and around the town.

When I lived in Texas, they used to have an October Fest and all the polka music you could possibly want to hear. I don't know if they still have it.

I bought a jar of coarse ground Inglehoffer at the store today 2ndary to informal survey/comments here. Not sure when I will have something to serve it on, but having it on hand is better than wishing for it later.

There are a handful of towns that still do a big Octoberfest. The closest one to me is in Addison, Texas. I used to put on a big German car show there. Then a car dealership took it over, and had no need for me.

The big one is WurstFest in New Braunfels, a very German town near Austin and San Antonio. I've never been, but have heard good things about it.

It is good on a lot of things, from hot dogs to egg rolls, IMO. I also use it in my own potato salad recipe. It has good flavor, and adds texture to recipes. Experiment with it.

Whisk, besides casey's suggestions, use it to coat pork tenderloins before grilling, or a pork loin before baking.

Take them a step further and add some crushed fennel seed.
