Question on Deep Frying

I just bought a DeLongi deep fryer. I have used it twice and have not yet made crisp french fries. I am using peanut oil and frying one Idaho potato at a time. What temperature should I be using?
This is frustrating, because I purposely bought a "good fryer" so I would get good results. I know I must be doing something wrong, but what?
 
I would say atleast 350degrees, and be sure not to crowd the basket. Also, try not to drop too much at one time, as this will drop the temp on your oil. Hope this helps.
 
I think that that the temp of the oil should be at least 375.

That way, the French fries are SURE to come out crisp and lightly golden.
At least that's what Emeril has his at.

Stick to the twice cooked process described in the other thread. 325 for the first cooking and 375 or higher for the second.
 
It's been a while since I had any French fries, and the last time I did, it ran my blood glucose level up to about 137!!

So I had to back off from eating them.

The first frying is what cooks the potato and the second is what makes the outside crisp.
