Yeah I know... Canning with dairy isn't safe cause there hasn't been any official testing. But I'd like to know, does anyone has any actual experience canning with dairy?

I mean you can buy canned alfredo sauce at the supermarket so it's got to have some sort of shelf life.

My recipe is an olive garden zupa toscano and has 8 ounces of heavy cream.

Any ideas?

Best regards,

Rabe

Hi and welcome to Discuss Cooking [emoji2]

It's not because there has been no testing. It's because 1) fats can go rancid during storage, 2) home canners can't reach the same temperatures and pressures as commercial equipment and 3) commercial producers use preservatives. It's not safe to can creamy soups at home.

Andy has the right idea.

Freeze it, don´t can it. Far too complicated to can anything with cream in it; lots of chemicals involved!
