    English muffins are simply a yeast bread dough that has been rolled out to about 1/4 inch thick, then cut to the size of English Muffins. I use a large tuna can that has had the top removed with a can opener, then washed. When the raw muffin rounds have doubled in size, dust a heavy frying pan with corn meal, and place the muffins into the dry pan. Let them cook over medium heat for about two to three minutes, or golden brown, flip, and repeat. To get them into two pieces, with all of those beautiful little valleys and peaks, simply push a fork through to the center, from the side, and turn the muffin a bit. Push the fork in again. When you gave gone all the way around, the muffins just come apart wonderfully. You will absolutely love the texture, and flavor.
