You asked about my lemon shortbread recipe.
Half kilo of flour
Pinch of salt
250 grammes of butter
200 grammes sugar
Melt the butter in a pot. Add the lemon juice and rind to it.
Mix the flour salt and sugar in a bowel.
Mix the butter in with the flour salt and sugar.
Flatten out mixture into one or 2 disk shapes. Cut each into squares or triangles. Or else you can leave them whole and just break off pieces of the big shortbread after it is baked and cooled.
Bake in a 180C oven for around 30 minutes. I think it was around 30 mins. Best keep an eye on it because I just baked until it turned a little golden.
The above makes quite a lot of shortbread. Around 29 or 20 pieces. If you dont want so much half the quantities of the ingredients.
