    Personally, I agree with you on the tomato. However, traditional Provencale is with tomato. I prefer just a ripe cherry tomato for the sauce --- just to give it a touch of color --- My favorite home recipe for scallops actually is " sauté in a tblsp of extra virgin olive oil, a tiny sprinkle of fine grain sea salt ... " Nothing less, nothing more --Also, Cream sauces as in Coquilles Sant Jacques, tend to disguise the exquisiteness of such a lovely sea scallop --- Thanks for the note.

    Firstly, I am writing to answer your question regarding what constitutes Provencal cuisine ? Cuisine from the province of Provence is based on the following ingredients:
    Olive Oil, Garlic and Tomato. However, it can also include: Olives, Pastis and Anise Licor, Aubergine ( Eggplant ), Provencal Herbs and wines or brandies from Provence.

    I have a Provencal Chicken Dish, since you mentioned a dislike for Sea Scallops. If you are interested I shall post it.

    June, I just had to tell you that our Canadian version of Netflix just sent (finally) "Love Me or Leave Me". Dad and I are planning to watch it on Friday! I can't wait! Thanks for mentioning it.

    June, I started with this recipe but I made my basic shortbread cookie instead which is 1 cup butter, two cups icing sugar, four cups flour and a pinch of salt. I substituged a quarter cup of cocoa and 2 teaspoons instant coffee powder for 1/4 cup flour and then proceeded to decorate as with this recipe. They turned out great! I am sure you can add your own twists to it as well! They are a real crowd pleaser and would be good at any event!
