Rob: Got the Tojiro Nakiri today. First let me say that CKTG is the fastest purveyor I have known. I asked the question on Sat, got an answer an hour later, ordered Sun, got a notice of shipment Sun evening, and package arrived today.
Some notes: First thing I noticed is that this knife if heavy in relation to my Santuko.
5.7 v 7 oz. The handle is exactly the same profile and size as the 210 Gyoto It is around a quarter inch thicker. Even with this, the balance is into the bolster. Fit and finish seem good. Sharpness is outstanding. It will halve a bell pepper from 6 inches.
Overall, a good deal at $50. I needed kitchen shears, so ordered Meissermiesters to fill out the free shipping. Whether it is more useful than a santoku or gyoto remains to be seen. Thanks for the lead
I have been looking for a knife such as this, and this seems to be a good deal. Am I going to be happy with this knife? I see that you have one and give it high praises on CKTG. Does it need to be sharpened prior to use, or is it ready to go? If you think it would suit my needs, and it is delivered sharp, I would have it sent here, otherwise I would have it sent directly to you.
At $50,this seems to be a good deal.
I have acquired a few old Dick steels that need rehandling, and plan on making a few handles. Don't know if the oldest are any better than those from the 60's, but have some of each. With a little polish and new handles, these should be better than new ones. I'll have less than $30 in them.
