    Thanks for sharing your thoughts about kneading bread dough with a countertop mixer. Your thread prompted me to check out a variety of countertop machines including Hobart's 5 quart. The best of the lot indeed seems to be Hobart BUT

    Because, I only bake bread once a week, I bake (often using high gluten flour) in quantities that meet or exceed Hobart's recommended maximums. Hobart''s quidelines did however provide some interesting info relative to the absorption ratios for pizza dough.
    Thanks again for motivating me to finally put to rest my temptation to spring for what would have probably been a few thousand bucks for a machine and accessories that would not do much more than we can already do with our primitive, mostly hand-me-down tools.
