Way too many scallion tops, what to do

Im growing a bunch of onions. I read somewhere to trim the tops and it will make them less likely to tip over during strong winds and rain ( and therefore stop growing).

Whether this is an old wives tail or not, dont know, but Ive been doing it for the past few years and have had relatively good success.

Problem is, overtime I trim them, im left with 2 + gallon sized bags of onion tops. I use them when I can in whatever dish I can. Ive also made some asian pickled vegetables and tossed a bunch in there.

I still have so many. I was considering making a veggie/ onion stock but even after that, Ill have a bunch.

Any suggest on how to use the motherland of onion tops ?

Green onion pesto?

When I buy green onions, I put the bulbs in water, and they grow back. Same problem -- what to do with them?

Glad I could be of absolutely no help.

This onion top stir fry sounds good!

I would toss the rest in the compost pile. Freezing or preserving them for future use may just be another form of waste if you don't have a good use for them.

Good luck!

There's even a link to a vegan, onion-top pesto recipe.
