Using Olive Oil in Cooking

When you roast vegetables in the oven, what does the addition of olive oil do?
(i.e. what would happen if you didn't toss the vegetables in olive oil?)

Keeps them from sticking and adds flavor. I also use it for grilling veges as well.

Olive oil, or any other oil, also promotes browning.
