Are there pasta experts as there are chocolaters for chocolate? I was curious if one could hire a pasta person to create custom pasta of certain shapes, colors, grains, etc?

I don't know about custom shapes, but this place makes a lot of different shapes and colors. If you make it worth their while, they might make custom pasta for you.
