Glass noodles, also known as cellophaned and bean thread noodles boil up into translucent yumminess. However, another way to use the is to drop the uncooked into hot oil, where they puff up dramatically, and become these lightly browned, crispy noodles.We will make a delicious filling, and a beautiful, buttery poached egg to fit inside our glass noodle nest.
Here's a unique recipe for those crispy noodles. Enjoy.:yum:

Filling:

Ingredients:
1‑4 oz. can tomato paste
1‑6 oz can Tomato Sauce
1‑12 oz. can dark red kidney beans
½ clove minced garlic
½ medium yellow onion, diced
3 heaping tbs. chopped green pepper
1/4 cup dark brown sugar
1 tsp. Chili Powder
½ tsp. Salt
1 tbs. Worcestershire Sauce
1 bay leaf, crumbled
2 tbs. olive oil
1 lb. ground beef

Place ground beef into a 12 inch covered frying pan and place over medium heat. While the pan is warming, add the olive oil to a 1 quart sauce pan and apply medium heat. Add the garlic,
onion, and bay leaf to the oil and saute until the onion turns
translucent. Add the remaining ingredients, stir until well
blended, cover and turn down heat to simmer.
Lift the lid from the ground beef and break up the meat into
bite sized chunks. Lightly salt the meat, stir, and cover.
Check the meat and stir the sauce every five minutes until the
meat is cooked through.
Drain the meat into a suitable bowl and place the juice in the refrigerator for later use.

Poached Egg
1 egg per person:
Liberally spread slated butter to coat the inside wells of poaching cups in a poaching pan. place 1 1/2 cup water in the bottom of the pan, followed by the cup tray. When the water begins to boil, add eggs to the poaching cups and carefully place in the poaching tray. Cover and let cook for about three minutes. Remove lid and gently push a spoon against the egg whites to insure the whites are cooked through. Remove the egg cups from the pan.

Nest
eat 3 tbs. deep oil in a large wok, or chicken frying pan to 350' F. Seperate the noodles into 3 inch circles. These will expand to double in size. Place circles, one at a time, into the hot oil. Lt fry for 1 minute. Remove to paper towel lined platter to drain.

Use scissors ot shape into birds nests. Place on plate, and fill with filling mixture, topped with a poached egg. Enjoy.

Tip, if you have little ones running about, when you drop the noodles into the hot oil, and they rapidly puff up, the kids will ooh, and awe. And of course you can fill your birds nests with everythi g from stir-fried veggies, and meat to ground beef and cheese, or anything else you can think of.
