and Onion Gravy

Cubed-up Watermelon for dessert later, maybe :LOL:
 
Tonight for supper I sautéed some onions and pork chunks and added some Madras curry paste. Then I added a bit of chicken and vegi stock and braised it for a little while. Once the sauce had reduced to as thick as I wanted it, it was ready to serve. We had brown basmati rice with that and a salad on the side. It was a lot milder than I would have liked. I forgot to add any hot peppers, while sautéing. Not quite as good as the chicken I cooked in a similar manner, but I think the sauce was better.

Chiles rellenos, made with roasted poblano peppers— peeled, cored, and frozen.

Stuffed with extra-sharp white cheddar, floured, and dipped in beaten eggs, then fried in a half-inch of oil.

Served with a warm tortilla, guacamole, and blue corn chips.
 
I love Chiles rellenos, but mine always seem to fall apart. So I stick to a local restaurant. lol
Yours look great!

:yum: I love Pot Roast, but I so suck at it.
But, HEH! Wait a second!
My Mother makes "da bomb" Pot Roast and now that she lives
here in Cowboyville with us, maybe I can convince her
to make this for us sometime :idea:
 
Ham sandwich with lettuce, salad, and green grapes. Mom had her grilled cheese with tomato sandwich and strawberries for dessert.

Instant Pot makes a wonderful, quick and easy pot roast. Tender and shred-able in 1 1/2 hours.
