Spring Rolls/Egg Rolls

Hey everyone, I bought some dual-purpose noodle sheets, supposed to be great for spring rolls as well as pastas, ravioli or lasagna, etc. but the noodles were a bit too hard for raviolis, so now I need a good spring roll recipe, or some tips. You usually use carrot sticks, sprouts, and bamboo shoots, right? Anything else that makes a tasty roll?? Also, what kind of oil would you reccomend for frying?
 
This is a recipe that I got from a friend whose family is from Korea. It might give you some ideas.

1 pack Egg roll wraps
2 lbs. ground pork
2 cups carrot shredded
2 T. oyster sauce
salt
black pepper
1 t. sugar
2 eggs beaten
1 cup onion chopped
noodles (these are the clear type oriental noodles. I don't know the name)

Mix all ingredients except eggroll wraps. roll up mixture in the wraps and secure with a little egg white. Heat oil to 375 and deep fry until golden.

This is the sauce she served it with

1 cup soy sauce
3 t. sugar
3 T. vinegar
1/2 cup water.

Mix and adjust vinegar and sugar to taste.
