Alix requested this recipe in another thread. It is one of my favorite recipes for using leftover ham.

Ham Patties

2 cups ground cooked ham
½ cup soft bread crumbs
¼ cup chopped green onion
1/3 cup milk
1 slightly beaten egg
Dash of pepper

Combine all ingredients and shape into 4 patties. Brown patties slowly in a small amount of oil. Serves 4. This recipe can be easily doubled and is great for using leftover ham.

I made these the other night and my kids flipped for 'em!
I made a double sized batch, and made each patty 1/2 the size of what it called for. It also seemed a bit moist, so I added unsalted saltines to the blend.

I served it over a bed of rice, and suggested that the kids use soy sauce, but they opted for (yeech!) catsup!
One son said he'd like it next time in a burger bun, and said we'd call it ham-ham-burgers.
It would be great with a side of cottage potatoes and scrambled eggs, I think!

I eat mine alone with catsup. jkath, it is good that way. I never thought of eating them on a bun. If the patties are too moist you could reduce the milk to a quarter of a cup. I am glad that your family loved them. I love the name of ham-ham-burgers.

Alix, I hope that you like them as much as jkath's family does. :)

sierra, those sound great. i think i'll try mine on a toasted kaiser roll w/ ketchup.
can't wait to make 'em!:)
