Anyone ever make these, or have a recipe for them? My girlfriend's family buys them every Sunday, from a guy they know in the poor Mexican section of a nearby town. I don't know what cut of pork it is, or what sesonings are used, but every recipe I've ever seen for Carnitas involves frying them, and these are certainly not fried. It almost seems like they are briefly seared, and then slow-roasted or smoked. And they remind me a little bit of pulled pork. I would love to make these, I think it's some of the best meat I've ever had. And I know my g/f would always make sure I had plenty of pork on hand if I could make these... suggestions anyone?

I believe pork butt is used. Cubes of the pork are cooked slowly in a pan on the stove top for an hour or more, bringing it to the point where it can be shredded as you would with BBQ pulled pork.

I'd bet the flavoring is as varied as the people who make them. It's probably cooked with your favorite salsa.
