Spicy Sweet Potato Balls

4 med sweet potatoes, cooked and peeled
1/2 tsp salt
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground ginger
Finely chopped walnuts

Place cooked potatoes in mixing bowl and add salt, cinnamon, nutmeg and ginger. Mix well. Shape into balls, using about 1/4 cup mixture for each. Roll balls in chopped walnuts and coat evenly.

Place balls on baking sheet and bake at 350 degrees for 20 minutes.

Makes 6-8 servings

Serve hot on turkey platter with watercress.
 
Mish, I love sweet potatoes, but can't get my family interested in them. This recipe might do the trick. Could I substitute canned sweet potatoes for the fresh? It would eliminate a few steps...
Also, can you think of something I could roll them in other than nuts? My family's not big on nuts, either. Maybe crushed corn flakes?
 
I don't see why you couldn't use canned, maybe omit the salt. (To me everything in a can has too much salt, but take a taste and adjust seasonings as you like.) I'll do some thinking on what else you might try rolling them in. A thought, if folks don't like the nuts, perhaps try forming the sweet potato mixture around a marshmallow. I don't know if it will ooze/leak, but you could try one as a test run.
