Really simple, quick, delicious tuna meal

I made this for supper tonight. I was inspired by the pre-flavoured mini tins of tuna you can buy from the supermarket that make quick and easy lunches. (they come in flavours like tomato/basil, teriyaki, etc.) We had a mix of fresh salad greens w/ a light vinegrette to go with this and it was perfect!

Anyway, here is my recipe for...

Tuna With Sundried Tomato and Basil on Toast

Ingredients:
2 cans flake water packed tuna (drained)
1 sweet onion, chopped
1 sm. can tomato paste
2-3 tbsp sundried tomatoes, chopped
freshly chopped basil, to taste
salt and pepper, to taste
french bread, sliced
olive oil (I used garlic infused, but you can use plain)

Directions:
Saute chopped onion in pan until cooked to desired tenderness. Add in 1 can of tomato paste, 1 can of water and the sundried tomato and stir until combined. Add in drained tuna and mix until heated through. Before serving, mix in freshly chopped basil, salt and pepper. Serve over thick slices of toasted french bread which has been drizzled with olive oil.

Here is a recipe from my files that I have been meaning to try:

Tuna with capers, anchovies and pasta

1 large can (14oz, 400g) tuna in oil
2 tbspns olive oil
1 large onion, peeld and finely chopped
2 cloves of garlic, peeled and crushed
2 cans (28oz, 800g) peeled chopped plum tomatoes
6 anchovy fillets - drained and chopped
2 tbspns capers - chopped
1 tspn dried basil
1lb (450g) pasta - your choice, macaroni or penne would be ideal
salt and pepper to season
Grated parmesan to serve
Drain the oil from the tuna into a large saucepan. Add the olive oil and fry the onion and garlic gently until softened.
Add the tomatoes and simmer for about 25 minutes until thickened.
Cook the pasta in plenty of boiling water (a dash of oil will help prevent sticking) according to the instructions on the packet.
Add the tuna, anchovies, capers and basil to the tomato sauce and heat through - taste and adjust seasoning.
Serve the tuna sauce spooned over the hot pasta - sprinkle over parmesan to taste and enjoy this italian fish recipe with some crusty bread to mop up the juices.
