One Lucky Catfish
One "Lucky" Catfish
2 catfish fillets
4TBL. lime juice
1 tsp. olive oil
2 cloves garlic, chopped
2 c. onion, thinly sliced
1 (14-oz.) can diced tomatoes with zesty jalapeno's (Del Monte) with juice, (or any diced tomatoes, if this product isn't available to you, with juice)
2 bay leaves
1 tbsp. fresh marjoram
1 2-in. stick of cinnamon
2 tbsp. jalapeno peppers, sliced
Salt and pepper to taste
1/2 cup green olives, pitted and sliced into rings
1/4 cup capers, drained

Rinse the catfish and pat dry. Place in a glass baking dish and splash on 2
tablespoons lime juice. Cover with Saran Wrap and refrigerate for 1 hour.

In a large skillet over medium heat, sauté garlic in oil until it begins to brown. Be careful not to over-cook.
Remove garlic and set aside. In the same pan, saute' onions until softened, about 5 minutes. Return garlic to skillet. Add tomatoes with juice, bay leaves,
marjoram, cinnamon, jalapeno peppers, salt and pepper to taste. Simmer for 10 minutes.
(Preheat oven to 350°.)
Add olives, capers and remaining lime juice and simmer for 5 minutes. Remove from heat. Pour over fish,
Cover dish tightly with aluminum foil and bake 10 to 15 minutes, until catfish is opaque and flakes easily. Serves 4.
