Thai Fried Chicken???

I saw a blog about it and have tried to find different recipes to try. One steamed the chicken until it was done, then dried it off and coated it with bread crumbs and deep fat fried a few minutes. Juicy inside, crispy outside.

Another version Deep fat fried the chicken a few minutes, then put it in the oven to finish cooking.

Anyone have a recipe for Thai fried chicken?? Thanks for your help!!!
 
there are many styles of thai fried chicken.this is one of my favorite.
i use about 6 thights for this recipe.(you can use other part)
garlic (as much as you like)
white peppercorn 1 teaspoon
coriander seed 1 1/2 teaspoon
cumin 1/2 teaspoon
soy sauce 2 tablespoon
salt 1 teaspoon
brown sugar 1 1/2 tbs
oil for frying
flour for coating
1. toast cumin, coriander seed until the scent come out.
2.smash garlic, white pepper, cumin, and coriander seed together.
3.marinade chicken about 2-3 hrs(overnight is good too)
4 heat oil in medium heat,coat chicken with flour.
5 fried chicken until chicken meat is fully cooked. chicken's skin should not be very crispy at this time
6 after all chickens are done, take them out from the pan
7 heat oil in high heat,fried chicken again to make skin crispy.this should not take long. :pig:
i have another recipe which is simpler.
1 pack of chicken wing ( i think chicken wing work best here)
garlic as much as you like
ground white pepper ( or ground black pepper) 1 tsp
soy sauce 5 tbs
sugar 1 tsp
3 cilantro
1.smash garlic,and cilantro together
2 put everything for marinade chicken, about 30 minutes
3.fried chicken in medium high heat. :pig:

by the way, if asian grocery store is available,please buy thai soy sauce. chinese and japanese soy sauce tase different:rolleyes:

In the Philippines there 's a large fried chicken chain called Max's and they do steam the chickem first dry pat them and fry them to perfection. These are whole chickens. In Thailand I would often see fried chicken on road side eateries and also street carts but i did not find them to be steams before frying.

nevertheless I love both of them
