We've been having soup quite often and I have a pot started for tomorrow.
I used 3 cans of cannellini beans, drained then pureed.I heated some chicken broth, about 2 cups and then added the puree. I put this to simmer. In a small bowl I mixed some milk about 1/2 cup with 2 eggs. Put a small amount of the egg,milk mix into the hot broth and beans, adding slowly a little at a time. I'm letting it simmer, but not come to a boil. In a few minutes I'm going to add 1/2 c. parmesan, some salt and pepper.Tomorrow, I'll reheat and serve hot with extra cheese to go on top..In all it took me about an hour from start to finsh, the soup is cooling now. I'm not sure how many servings i'll get but it looks to be about 4-6 depending on how much each person takes Not a lot of seasonings here, but the milk and eggs make it a comfort food for me...
