Killer Cranberry Sauce

This is the best cranberry sauce I have ever had...

1-1/2 C sugar
1 navel orange
1/2 t grated ginger
4 C cranberries
1/2 C (2 oz.) toasted pecans

Grate the orange peel and add to a pot with the sugar and ginger.
Add the juice from the orange into the pot and simmer over
medium heat until the sugar is dissolved.
Add cranberries and cook until they pop - about 5 minutes.
Add pecans and cool sauce
 
Mai - this recipe sounds awesome. My husband makes something similar but with canned whole cranberries

1 can whole cranberries
1 Granny Smith Apple, cubed
1/2 cup or so of chopped walnuts (I think more but I can't remember)
a couple pieces of orange chopped
a splash of orange juice

I am copying yours down - the ginger in it sounds great!!!

Hello, everybody. I've just tried Mai's Killer Cranberry Sauce with a minor variation (almonds instead of pecans because I'd forgotten to buy some) and it was a real hit with my family. It's really delicious!

Use this same recipe but add one apple to make it perfect.
 
Only if you make it at my house for me for dinner will it be perfect :mrgreen:

Here's a couple I have. I've made the Cranberry Sauce, but not the Chutney. The sauce is outstanding!

Cranberry Sauce
Yields: 2 ½ c

¼ c fresh orange juice
¾ c water
1 T fresh lime juice
1 c sugar
1 12 oz bag of cranberries
1/8 t kosher salt
zest of one orange
zest of one lemon

Over high heat, boil the O.J., water, lime juice, and sugar, until sugar dissolves. Add the berries, the salt, and the zest’s. Reduce heat and simmer. Cook until it reaches your desired thickness and texture.

Cranberry Chutney
Yields: 4 c

1 T olive oil
1 c onion, chopped
1 t garlic, minced
¾ cider vinegar
¼ c balsamic vinegar
1 T lime juice
1 c sugar
1 12 oz bag cranberries
1 c apple, cored and chopped, unpeeled
½ c golden raisins
½ c dried apricots, chopped
2 t gingerroot, chopped
2 whole cloves
1 t red pepper flakes
½ t kosher salt
zest of one lime

Over medium-high heat, sauté the onions and garlic in olive oil, about 5 minutes. Add the vinegar’s, lime juice, and sugar. Cook until the sugar dissolves, about 5 minutes. Add the fruits, gingerroot, seasonings, and lime zest. Reduce the heat, simmer and stir for 15 – 20 minutes.
