My grandmother used to make a pie that had homemade butterscotch pudding and some kind of nuts. It was topped with meringue. Any thoughts on this?

I think you could create your own butterscotch pie, elaine. I should think all you would need is a baked pie shell, a quantity of homemade butterscotch pudding, some toasted chopped pecans and meringue.

I found this recipe for homemade butterscotch pudding in the January 1999 issue of Gourmet magazine.

All you'd have to do is to fill your prebaked pie shell with the pudding that you've added some toasted pecans to, top with meringue and brown the meringue a bit.

Hope this helps. Sounds yummy. I like butterscotch "anything."

Recipe4Living, this recipe intrigues me very much. I would like to try it however...

Bring to a boil and boil to the hard ball stage on a candy thermometer.

Could you give us the actual temperature on that if you can? thanks:)
