Wednesday dinner ideas for April 2

Morning, off to work soon so not making dinner but there's plenty from last night so the DH can do the rerun thing.

How about what anyone else is cooking?

pacanis 04-02-2008 09:05 AM

I don't kow what I'm having.... soup or something else I cooked in the pressure cooker.
I know it is thawing in the fridge. That is all I know. I guess there's some logic to labeling what you freeze.

suziquzie 04-02-2008 09:14 AM

Uh oh, is it "I dunno" day again?
I'm thinking either tacos or meatloaf.

shortchef 04-02-2008 09:18 AM

Rigatoni with prosciutto and fontina cheese in a bechamel sauce, nice tossed salad. I bought some prosciutto a few days ago but haven't found a nice melon to pair with it, so I will make this dish. I got it from Everyday Italian. We will say it is in honor of Giada's sweet little girl.

YT2095 04-02-2008 09:20 AM

I think I`m going to make a pizza, I`m in the mood for that.
and I`m going to attempt to do one with a stuffed crust!

Flourgirl 04-02-2008 09:40 AM

I'm making a meatloaf recipe from the January 2008 issue of Gourmet magazine. It has beef, pork, bacon and prunes for some sweetness & moisture, and its topped with more bacon. I'm hoping it will have lots of flavor. I'll make some roasted sweet potatoes and peas to go with it.

I think I'll detour and go the Shortchef's house....................

Well, DH waited too long yesterday to start the pizza crust dough, so that's in the fridge for later. I guess he might make himself a flatbread tonight - he's on his own  I'm off to dinner with friends to a Peruvian restaurant for some ceviche. Can't wait.

pdswife 04-02-2008 11:07 AM

Gosh, pizza sounds great but... I think we're having salad and veggies and leftovers.

SixSix210 04-02-2008 11:20 AM

I've got a partially frozen chicken in the pressure cooker. I just threw in some odd stuff for sure - this mixture of cilantro/ginger/spring onions that I keep frozen, some fresh ginger along with some of the sherry I store it in, the end of some teriyaki sauce, some smashed up cloves of garlic, and some of this balsamic marinade/soy sauce stuff I buy that is fabulous! I know, I know - but it just can't be too bad, can it? I did add some water because it just needed more liquid.

I guess I'll just have a big ol' salad with it and some edemamme.

My new fridge may be on its way, so I'm trying to make some more space -- cook up the cornish hens in the slow cooker... maybe cook up some frozen (Omaha Steaks) kebabs & rice, finish up the cheesecake, & eat up all the veggies. In short, not sure yet what's going to turn up on my table tonight. It may be a melange of ingreds/dishes

Orange Roughy is on sale for $5.99/lb. How could I resist? So tonight

It's orange roughy, seasonings to be determined later
Fresh asparagus - I love asparagus
..and I bought a loaf of cheese/onion bread. No idea how it will taste.

No dessert.

Tonight it is homemade pea spoup with ham and carrots and some grilled cheese sandwiches made with rye bread.

That pasta sounds delish!! I may have to try it this weekend. I could make a meal out of that and a salad.

B'sgirl 04-02-2008 05:33 PM

I think I'll go with some ginger chicken stir fry today. That mozambique looks really good too, I may have to try that one of these days!

Little Italy 04-02-2008 06:03 PM

Home made pizza, with dough from scratch.

Adillo303 04-02-2008 06:29 PM

I made the hot dog buns, made them a little larger.

Sautee'd *SP) Onions, frying pepers, utaluan seasonings and 4 cloves fo garlic in evoo and some butter for flavor.

Precooked sweet italian sausage, 4 links in microwave, 5 min on menium heat on a plate wrapped in clear plastic wrap.

Penny sliced them put them in with the other stuff, and finished cooking.

Added about 3/4 cup of spagetti sauce.

Sliced a bun and spooned on SP&O from the pan.

Served open face.

DH bought a bone-in ham and a bag of fresh green beans at the store Monday. Today, he sawed off the shank and cooked it in with the green beans, onion, a little garlic and red potatoes. Later, he's going to fix a pan of cornbread to go with.
I will be in pot liquor heaven.

love2"Q" 04-02-2008 07:34 PM

ordering subs and hot wings ...
i am excited ..

Toots 04-02-2008 07:50 PM

I grilled a pork tenderloin and basted it with a rasberry chipotle glaze. Also made salad with balsamic dressing and goat cheese, grilled asparagus and roasted red potatoes.

Figured I would grill since another deluge is supposed to begin tomorrow.

pacanis 04-02-2008 08:23 PM

I was going to take a drive and get some carry out wings, Q. Almost wish I had. I hardly ever eat anything I don't make myself anymore. It is a treat just to grab something tasty and be done with it.

I still don't know what I'm having. I'm using the microwave to hurry the thawing along. I thought it was something I had cooked in the pressure cooker, either the basic meal stuck in a container and frozen or a soup made afterward, but it's starting to look like the stew I made a while back.....
I hope so. I'm kinda in the mood for stew now. It's even smelling like stew

RPMcMurphy 04-02-2008 08:47 PM

sorry guys i'll proper intro tomorrow (top chef is coming on!) but here is what I made for dinner tonight.

pacanis 04-02-2008 08:55 PM

That looks better than beef stew!
Welcome RP. Nice plate!

suziquzie 04-02-2008 09:02 PM

I changed my mind. (Imagine that)
DH decided he wanted to start (again) to get into shape, meatloaf and tacos were out.
Spaghetti w/ no meat sauce...... best I could do short notice.
we may be having carrots wrapped in lettuce leaves tomorrow.......

dw made turkey meatballs, so i made a meatball hero, and then picked on an odd mix of korean seaweed salad, raw pumpkin and sunflower seeds, and a few slices of the remaining (fortnight after) easter ham. it was a weird dinner.

i readied the bone and hacked off the largest piece of lean meat from the ham as dw asked for them to make pea soup. i took the fat and smaller muscle chunks to make kale and two potato soup.

ironchef 04-02-2008 11:53 PM

Felt in the mood for some good steak, so picked up a couple of 1 lb. ribeyes. Served them classic steakhouse style--simply seasoned with kosher salt and fresh cracked pepper, cooked medium rare--with creamed spinach.

ooooh, oooh oooh, were they these?
I saw on Oprah that she [OW] ate these everyday for a week when in Santa Barbara California. She made it seem like they were the best thing since sliced bread so looking up the recipe, I made them. Gad they were good...

Bilby 04-03-2008 04:40 AM

My mum came over for dinner last night and brought it as well!! Bacon and egg pie which I served hot with herb and garlic feta, Kalamata olives and tomato/red onion mix. Followed by a Double Caramel Heaven Icecream each. All washed down with a Killerby SSB. Very nice meal.

lyndalou 04-03-2008 05:30 AM

Sixsix10,
What is Sazon and where do you buy it? If I can't find any what would be a good substitute?

suziquzie 04-03-2008 05:41 AM

Nice pizza YT!!!

YT2095 04-03-2008 07:45 AM

Thanks :)

I was quite pleased how the stuffed crust turned out, I half expected it to open out again during cooking, but it was quite well behaved :D

middie 04-03-2008 07:57 AM

I was another one that had pizza last night.

Jeekinz 04-03-2008 08:09 AM

That pie looks great, YT!
