I am splurging tomorrow morning. They had fresh side pork (uncured bacon) at the store tonight. My favorite sandwich is fried fresh side.

Simply flour, place in a skillet, a little salt and pepper, fry until it's golden brown.

If you haven't tried it. I highly recommend it. Oh, if yours still has the rind on it, remove it before cooking.
