Home alone...made my own lunch today

Hello,

I don't really do much cooking. I just prepare simple meals for myself when I have to.

Well, today I decided sort of impulsively to make shrimp fried rice because we had left-over brown rice, some frozen shrimp, frozen broccoli stir-fry veggie pack, and teriyaki sauce. Then I thought, why not put in some orange marmalade since we have a jar in the fridge. Then while in the fridge, I noticed an open can of pineapple chunks.

So, I thawed the veggies and shrimp. Then I started sauteeing them, added the cooked brown rice, added the pineapple chunks, poured on some teriyaki sauce, and spooned over some orange marmalade. I mixed around and cooked fully, then enjoyed. :)

It was quick, yummy, healthy, and easy enough for an amateur to make. The pineapple chunks added a really nice touch, so consider this next time you make stir-fry. :chef:
 
...and the orange marmalade sort of served as duck sauce. I know plenty of people who squeeze that on their fried rice. Good job!!!
