in the far east i had peking duck with green pancakes which where lovely . What exactly are they.
 
Could the pancake batter have had finely minced scallions cooked right into them? While the pancakes (which are actually more like crepes) traditionally served with Peking Duck are plain with scallion pieces served alongside to be wrapped up in them along with the duck, perhaps mincing the scallions into the batter itself was just a recipe twist. Did they taste oniony?
 
Try a google for Wolfgang's duck & pancakes. The pancakes are thin like crepes & include scallions/green onions. Bought a roasted/bbq duck about a week ago & made the pancakes. They were delish. You could get some hoison or plum sauce & spread it on the pancakes, then add your shredded duck. I think of it like Moo Shoo.
 
As has been widely noted, they're an onion pancake. Green onions and often chives too. There is also a thick variation sold as a street snack.
