Question on mustard...

I found a recipe for an herbed mustard the other day, it asks for dijon mustard, grainy mustard, sour cream and different herbs, as well as some spices.....now my question is....why is it when you mix these together it then is only good in the fridge for "up to 5 days", yet if you keep them seperate, the ingredients would be fine for much longer....?? I don't get it, why the shelf life change?
 
It could be the herbs - herbs can turn in stuff. Can you post the ingredients without the method? That way it won't violate copyright issues.
 
Herbed Mustard
Ingredients
Makes 1/2 cup spread.
1/2 cup reduced-fat sour cream
2 tablespoons grainy mustard
1 teaspoon Dijon mustard
2 tablespoons fresh thyme leaves, chopped
Coarse salt and ground pepper


What if you use dried herbs....still the same issue?
