What is a cep and what is the closest mushroom to a cep as i am making canneloni.

A "cepe" is another word for "porcini". It's a wild mushroom, particularly prized in Poland and in Italy.

Fresh ones may be hard to find in stores, but shitakes would be acceptable substitutes.

I am making a canneloni i can get dried porcini . Will the porcini work well within the canneloni
 
If the recipe calls for fresh cepes, I would go with fresh shitakes, if you can get them.

If the recipe calls for EITHER fresh or dried cepes, the dried porcini would be perfect.
