ISO: Homemade Sausage recipes

Hi Everyone -

I'm looking for a good sausage recipe that I can plop down on my smoker for our annual PigFest. Can anyone share a recipe or 2? Does anyone have any pointers on make their own sausage?

I'd like to aim for a standard texas style pork sausage but I'd also love to make a chicken sausage with apples perhaps?

Truth be told, any recipe would be great!

Have you tried to google (or Blackle) it? I just put in "homemade sausage texas style recipes" and got quite a few results. There's some even on video, I think it was ehow or something like that...

I watch alton brown on the food channel make these 2 - I also typed in homemade sausage in thier search and a few others came up
