I love jicima, but have not seen it in the store this year until recently. When I did see it I grabbed one right away. Not having any plans on how to use it I had to come up with something on the spot. I grabbed a few Granny Smith apples, a fennel bulb, a lime, and some Manderine oranges. I rand the jicama, fennel, and apple through my mandoline with the julienne blade on so that they were sliced like match sticks. I added the juice of one lime and a big handful of the oranges. A small sprinkle of salt and a few big grinds of pepper and it was done. This was a very refreshing side to serve with all our cookout food.
