A great paella recipe!

Lobster Paella Recipe
1/4 cup of olive oil
1 1/2 cups chopped yellow onions
2 red bell peppers
2 T minced garlic
2 cups white basmati rice
2 cups chicken stock
1/2 t saffron threads
1/4 t crushed red pepper flakes
1 T kosher salt
1 t ground black pepper
1 1/2 lbs. cooked lobster
1 package frozen peas (10 oz)
1 T minced parsley leaves
2 lemons cut in wedges

Saffron is the key ingredient. It cost about $18 for a few small threads. The spice jar looks almost empty when you buy it. But be sure to splurge on it, it will make the dish! (I purchased a paella pan from crate and barrel.)

This dish includes such a great variety of flavors, it is truly one of my favorites. You can use substitute the lobster with chicken.

Complete your meal with Sangria:

1 bottle red wine

¼ cup brandy

2 tablespoons fresh lime juice

2 tablespoons orange juice

½ cup sugar

½ orange, thinly sliced

½ lemon, thinly sliced

1 apple, cut into thin wedges

2 cups sparkling water
