Yummy with smashed potatoes, peas with mushrooms and salad. My kids love this.

Take # 6-- 1/2 inch thick pork chops dip them into about 1/2 cup melted butter then into 1-c. fine bread crumbs. Heat 3 Tab. butter and 3 Tab. veggie oil to very hot, Saute pork about 10 min.season with salt and pepper.Remove meat to serving platter and keep warm. Pour off fat from skillet and add 2 Tab. cognac and 3 Tab. Madeira simmer 2 min, remove from heat Mix in 2 egg yolks slightly beaten Together with 6 Tab. heavy cream , stir into skillet and heat til thick but don't boil. Spoon over chops and sprinkle with chopped Italian parsley.
