Any Ideas - night before prep for lunch

Hi,

I find lunch times so mundain sitting at my desk with boring sarnies....

I'm not that creative on the cooking front and im after some ideas for what i could make the night before for lunch; main ingredients in my fridge are...

Carrots
Onions
Brussel Sprouts
Cucumber
Beetroot

Any kind of salads? soups? any other savoury ideas?

Gosh, that's a really limited list, Carl. You need to go shopping.;)
It would help if we had more information.

Are you a vegetarian? I ask because I don't see any protein there.
Do you have at least basic cooking knowledge?
Do you have access to a microwave at work?

Many of us here at DC have been on a Sesame Noodle kick, it's great for lunch, and best served at room temp. It's the easiest thing in the world to make, and just delicious. Give it a try........here's the recipe.

I will assume you have some store cupboard ingredientsSprouts make the best coleslaw with onions and carrots.
Roast and peel the beetroot, cube then dress with Evoo and balsamic.
Mandolin the cuc and onion, dress with balsamic.
Mandolin the beetroot deep fry to make chips.

Roast or steam all but the cucumbers. Chop the cucumbers for crunchy texture. Wrap them all up in a soft flour tortilla (like a burrito) with hummus or mayo/dijon. Slice in half at an angle. Enjoy :)
