Anniversary party for a club I belong to. I successfully roasted 40lbs of Pork loin in the oven. The Hot/cool method works once again.

I seasoned each 5 lb loin section with dry seasonings(steak seasoning, seasoned salt, garlic salt). Pre-heated the oven to 525F. Put the loins in and let them set in the high temp for 20 minutes. Turned the loins down to 280F and let them set without checking them!!(very important). They have to be in at least 1 hour before even thinking of opening the oven door.

The roasted 2-2.5 hrs until they reached 140F. Pulled them out and let them rest for 30 minutes while we finished up the rest of the dinner.

Sliced them down(very juicy and tender) placed in a roaster to keep them warm. I them took the drippings, put in a pan with some white wine and water a little Worcestershire sauce and a diced up onion. Cooked until the onion was clear and ladled the broth over the pork in the roaster. Wow.. fantastic!!
