Here we go again I know many just can't abide Lima beans, I love them and am always on the look out for ways to fix them. So How about we stuff something with the puree. I'm thinking small tomatoes or nice sized mushrooms. Ok then lets puree the beans we will need 2 10-oz packages of frozen lima's I like the baby's...cook the beans like the package says...Drain but save the cooking liquid. Puree the beans in your f/p or a blender add 1 Tab. butter, about a 1/3 cup of cream and just enough of the cooking liquid to make a smooth puree. Now add salt and fresh cracked pepper. Keep warm and fix your choice of the tomatoes and mushrooms or just spoon the puree around a platter and then put a pork roast in the center. I do it this way but plan to give the mushrooms a try. Wonder how many I'll need. Or do you think some med or small Green tomatoes with the center scooped out would be good. ? Thanks now for any ideas you care to lend.
