Yogurt Oatmeal Muffins

3 cups large flake oatmeal (not quick oats)
2 cups fat free yogurt
1 cup honey or brown sugar
1/2 cup melted margarine or oil
2 cups flour
2 tsp baking powder
1 tsp baking soda

Stir together the oatmeal and yogurt. Let sit for about 20-30 minutes. Turn on your oven to preheat. Add the honey/sugar and the margarine to the oatmeal and stir to blend. Add all the dry ingredients at once and stir to incorporate.

Bake at 350º for about 12-15 minutes. Makes 12 muffins and one mini loaf or 12 mini muffins. Depending on the yogurt you use these are about 250 calories per muffin.
