Different Tpye of Pasta Sauce

5 Garic cloves
About 7 big sprigs of Cilantro
1/4 cup of Olive oil
2 Tablespoons of Rice Vinegar (usually for sushi)
1/4 cup of tomato puree
1 crumbled piece of bacon (cooked)

Puree the garlic, cilantro, oil, bacon and tomato until fine.
Saute the mixture lightly. Put rice vinegar in mixture.
Pour over pasta and mix well. Its a nice option to put a little chicken broth in also.

Salt and Pepper to taste. :)

Bang.... with balsimic vinegar you might wipe the flavor of the cilantro. Also rice vinegar is much more milder. Balsimic could possibly be too acidic. Then again it could be an improvement on the dish. lol!
 
Silly me..... you can substitute fresh lime juice for the rice vinegar. :roll: I cut out the pulp from the rind and tossed it into the food processor. I has a GREAT contrat with my romano cheese. :)
 
This recipe looks great. I'll be trying it. I bet it would be good served cold too, as a pasta salad, maybe with some black sliced olives and sliced onion thrown in. :)
