Our Potato Stew

We had this tonight with the grilled bratwurst sausages. This is one of Mamma's favorite recipes.

Ingredients:

4 medium potatoes
1 medium onion
1/2 large red or yellow pepper
2 medium tomatoes
2-3 tablespoons EVOO
ground black pepper
sea salt
3 bay leaves
Seasonings: thyme, rosemary, garlic powder and basil to taste
(We like to add crushed red pepper and a tiny bit of curry powder also)

Preparation:

Peel and wash the onion.
Wash the red pepper and remove the seeds.
Wash the tomatoes.
Chop the vegetables finely.
Wash and cut the potatoes into cubes.
Heat the oil in a pot and add the potato cubes and the chopped vegetables and a bit of water and salt.
Saute everything, stirring continuously.
Add more water to cover the potatoes and simmer.
Add the sea salt and ground black pepper and other seasonings of choice.
Remove bay leaves after cooking.

We like to have this with fried eggs, any type of sausages, or chicken.

have you thought of soft poaching an egg or 2 IN the soup/stew? I bet it would be great, and then served on top of a crumpet/Eng. Muffin/ Biscuit, with some bacon crumble and use the soup/stew "broth" as the hollandaise?

No I have not until now! This sounds quite good, TATTRAT. I shall speak to DA of this, and perhaps we shall try it!
