Zucchini, Avocado, and chives
4 yellow or green zucchini about med size. boil til just tender about 12 min. remove from water and chill for 1 hour. after chilling slice in half the the long way. hollow out the inside of the squash center using a small spoon or melon baller. Now place cut side down and let drain and chill til ready to serve. Puree 3 ripe avocados, 2 Tab fresh basil, 3 Tab. minced fresh chives 1 tab fresh lemon juice, 1 Tab white wine, salt and pepper and several dashes Tabasco.
Pipe the filling into the zucchini cavities Serve cold as a side with fish, grilled meats, ribs stew or soup finger foods are great.
